My favorite dish ever is a great, perfectly-seared rib eye steak. I used to have little patience and know-how for properly cooking steak, and it came out overcooked and dry every time. Over the years, I wised up and practiced with much trial and error until I had it just right. I am very proud of my method, and my steak comes out perfectly medium to medium-rare every time.
